1. It shone like a beacon of National pride
2 meters high and 8 meters wide
Dignitaries basked in the honour and prestige
Just to stand beside, the world’s biggest cheese

Add the rennet, make the curds
Drain the whey, keep them stirred

That’s how cheddar’s made
11 tons was what it weighed
When the world came to see

1. It was made here in Canada, in Perth along the Tay
For the world’s fair in Chicago, from best milk and whey
Every cow from miles around, was milked by hand with care
And Perth’s mammoth cheese, was soon known everywhere

2. The cheese was shipped like royalty, on a special railway car
And folks all cheered to see it pass, from near and far
On to Chicago, to be proudly displayed
But it fell right through the floor, on the very first day

3. Perth had lots of dairies then but now none remain
And fresh curds are a pleasure that’s hard to find today
Yeah, times are different now, and can’t be compared
To the days of 1893 at the world’s fair
